Blanc de Noirs II
France’s Champagne may have a reputation for producing the greatest sparkling wine, spectacular sparklers can be made worldwide -and we like to think that our Blanc de Noirs can go toe to toe with the best of them! The Wine Panel called our Blanc de Noirs the best sparklings from the Northwest they've ever tried.
Tasting Notes: The burnished gold color of this complex, Champagne-method sparkling wine immediately lets you know that it’s a bottling of unique complexity and depth—a result of impeccable Columbia Valley Pinot Noir and two years of aging on the lees. Aromas of apricots, caramelized peaches, hazelnuts, and pears precede a palate of effusive, crisp autumn apple flavors. The palate is perked up even further with delicate, laser-precise bubbles, hints of marzipan, and even a suggestion of crème brûlée. It remains lively and mineral through the finish, and beyond versatile at the dinner table.
Pairings: It offers a splendid array of pairing possibilities. Consider accompanying this sparkling wine with fresh oysters for a taste of the sea's brininess, or try it with smoked salmon for an appetizing contrast. It is an excellent companion to savory dishes like chicken or pork with creamy sauces. This versatile sparkler can even elevate the classic fish and chips to a gourmet level.
